Spelt Organic Wheat Free Sourdough Bread

      This bread is a challenge for most to bake and only when you become competent in your baking ability should it be attempted. The prohibitive expense of the flour, being 5 to 6 times as much as wheat flour, makes this one of the most expensive loaves of bread. It took a tremendous amount of effort to create an outstanding loaf with the peculiar characteristics of the spelt grain, but with the right sourdough culture it was possible to achieve sublime results that would have been otherwise unachievable. This grain further pronounces the importance of having a sourdough culture at the heart of its baking, without any substitutes. This is the only way to bake good 100% spelt bread; any other way would be a waste of such a precious commodity.
