"Spectrum" Sourdough Bread

The Spectrum is named for bridging the gap between a wheat and rye bread. The wheat supplies the structure of the crumb, the cracked rye gives it a depth of character, which is further emphasized with fresh finely ground caraway seeds. This works to bring out the nutritious combination of two different bread grains.
